Based in Western Maryland Founded in 2002 and based in Accident, Maryland (western Maryland) by partners Mike Koch & Pablo Solanet, FireFly Farms is proudly dedicated to excellence in handmade goat cheese. Firefly Farms only use four simple ingredients and our cheeses have no additives, preservatives, or stabilizers. We manufacture our entire line of goat cheeses by hand – using apprenticed cheesemakers, not machines. Our cheeses are scooped, turned, salted, washed, brushed, and wrapped by hand. We are committed to putting people to work in a part of this country where jobs, particularly head-of-household wage-earning jobs, have become scarce.
Practices
FireFly Farms' cheeses are produced using sustainably-produced, locally‐sourced fresh goat’s milk and time‐honored, traditional methods of cheese making.
Our cheeses have received national and international recognition for taste and quality since our opening in 2002. We source fresh goat milk from family farms all within a 30-mile radius of our creamery. We have mutually beneficial contracts that pay farmers fairly based on the components and quality of their milk.

This contract commits our farmers to humane animal husbandry and restricts the use of antibiotics, hormones, and animal feeds that have been treated with chemical or synthetic fertilizers. Our farmers are not forced to manipulate their herds to provide consistent, year-round milk production. The animals cycle naturally, and we manage our production and aging processes accordingly. Our milk-pricing contract does not penalize producers for “under-production” in winter months, nor “over-production” in summer months. We coordinate closely with our producers regarding anticipated herd growth, and breeding time frames.
